This lovely copper pot still was built to the Kulsveen's
specifications by Vendome, Inc., perhaps the premier
manufacturer of American whiskey distilling equipment.

Like many European-style pot-still/column still hybrids
it has what amounts to a complete column still array
of switchable plates and taps. However, these are
installed in a tapering "gooseneck" tower, such as
are usually seen only on dedicated pot stills. This allows
the distiller to close all the valves and use the equipment
as a simple pot still, or open them up and use it like
a copper column still, which is how Drew Kulsveen made
the whiskey for the first sixty barrels they produced in January

Check out the complexity of the condensers. Alcohol vapor can
be routed into just about any sequence the distillery wants in order
to produce the results s/he is looking for.

The cisterns that Molly is looking at are the original cisterns
used by the Willett distillery, at least from the 1940s
